It’s 1am and you’re drunk out of your mind. You smell of Coronas and club funk, and as you stumble and trip towards the car, you realize the bar still has your credit card. Oh and one other thing….you’re STARVING! Sound familiar? Well then, Thayer Street is your home away from home.
Pulled Pork Quesadilla w/ Corn Salsa, Guacamole, Sour Cream & Pico de Gallo
For the past year, Baja Tex Mex in Providence, RI has been a late-night favorite of mine. Ingredients are super fresh and made daily. They close at 2am EVERY DAY which benefits the night owls (like me) and bar hoppers. And most importantly, the food is CHEAP. All burritos, tacos, salads, and quesadillas are $5.99 w/ unlimited toppings. You heard right, toppings are FREE!
Some of my favorite toppings include their sweet Corn Salsa, chopped white onions, and their spicy green chile sauce. But the toppings are always secondary when it comes to the “meat” of the meal (no pun intended). Tender steak, marinated grilled shrimp, chipotle-infused chicken, and moist pulled pork are some of the most popular fillings at this Mexican eatery. I always go for the pulled pork because of the amount of time and love Baja puts into each batch. The pork is submerged in a bubbling pool of spices and seasonings and then slow cooked for at least 6 hours. Trust me kiddies, this ain’t your local Taco Bell.
Not in the mood for Mexican? Don’t worry. The chefs at Baja are always able to please the picky eater of the bunch. Angus cheeseburgers, chicken salads, french fries, and steak sandwiches are some of the tasty options you’ll find on their colorful menu.
If you watched the clip earlier (click here if you’re lazy), you would have seen my friend, CPA, beasting on a plate of Cheese Fries. Baja adds their own spin to the classic diner food by sprinkling generous amounts of Spanish spices (sazon and paprika) over the layer of gooey, warm cheddar cheese sauce.
My other friend, Harold, is a carnivore and settles for nothing less. He went for the Philly Cheese Steak with Melted American and I couldn’t help myself from stealing a couple of shreds of the juicy, chopped steak.
Like I mentioned earlier, this is without a doubt, one of my favorite spots. The fresh toppings, hearty fillings, and price all result in a wonderful dining experience. So the next time you’re up to your neck in Irish Car Bombs, stop by Baja and enjoy some of the best Mexican cuisine around….even if you fall asleep while eating.
